sopi di galiña – Antillean chicken soup

sopi di galiña (alternative spelling: galinja) is the traditional, Antillean version of a well-known dish.

One of the most famous dishes from almost every kitchen is chicken soup. This dish is also popular in the Antilles. It even seems to have medicinal properties against flu and colds.



This version is distinguished from other types of chicken soup by the large pieces of corncob inside. For the Antilleans this is an indispensable ingredient for a tasty sopi di galiña.

Everyone of course has their own version of this chicken soup. We make it here with the ingredients that we have encountered most often in these (family) recipes.

sopi di galiña is really such a dish that most have fond memories of. And fair is fair: Grandma makes the best of course!

INGREDIENTS:

  • 350 grams of coarse soup vegetables
  • 3 corn on the cob
  • 1 kilo of chicken (drumsticks)
  • 1 onion
  • 2 garlic cloves
  • 1 Madame Jeanette pepper
  • 3 medium potatoes
  • 2 sweet potatoes
  • 1 winter carrot, in slices
  • 2 liters of chicken stock
  • sunflower oil
  • salt and pepper to taste

PREPARATION SOPI DI GALIÑA:

  1. Remove the seeds from the hot pepper and then cut the pepper into thin strips.
  2. Then cut the onion and garlic into small pieces and fry them together with the pepper in sunflower oil with a pinch of salt.
  3. Then break the bone of the drumsticks where the meat ends. (about half) Use only the pieces with meat.
  4. Then fry the chicken in sunflower oil all around brown.
  5. Now cut the corn cobs into 5 pieces each.
  6. Then cut the potatoes and sweet potatoes into cubes and cut the carrot into thick slices.
  7. Then heat 2 liters of chicken stock (may from a cube) in a pan and add all ingredients.
  8. Let the soup boil for at least another hour.
  9. Finally add vermicelli and let it cook for a while.
  10. Eat the soup with a tasty Antillean sandwich!
