Caribbean Waffles

These homemade waffles have a Caribbean twist: you make the batter with coconut milk and lemon. This way you can give this delicacy even more flavor!

Of course you need a waffle iron to make waffles. Traditionally, this is a very heavy cast iron mold that you place on (or in) the fire. We used to do this by hand. It was always a daunting task to turn the heavy iron over. So grow muscle balls!

Today, fortunately, electric waffle irons are available for purchase. These heat up quickly, weigh almost nothing and do not need to be on the fire. Convenience serves man.


We liked Tomado test their waffle iron for this recipe. Well… actually I don't say that quite right: the device (The TGM2001S) is not only a waffle iron, but also a contact grill and a sandwich maker. Because you can change the iron plates, you always have a different shape to work with. Super fine, since you only need one device for these three dishes.

De grill appliances from Tomado are very friendly priced and take up little space. This is of course extra the case when the grill can also make sandwiches and waffles. In our opinion, a nice addition in the kitchen!

Then on to the waffles ...

We made 12 Caribbean waffles from this recipe on the Tomado multigrill. They were done within a few minutes (about 3) on this handy device. Do you have a cast iron waffle iron at home? Then it takes a little longer, about 5-6 minutes.


  • 3 eggs
  • 100 gr granulated sugar
  • 1 packet of vanilla-flavored sugar
  • 400 ml coconut milk
  • 100 gr grated coconut
  • The juice + the grated zest of 1 lemon
  • 300 gr wheat flour
  • 1 bag (16 gr) of baking powder
  • 100 gr melted butter
  • A pinch of salt
  • Oil or baking spray for greasing
  • Powdered sugar, fruit and lemon slices to decorate

Preparation of Caribbean waffles:

Mix the egg yolks with the sugar and vanilla sugar and beat until the color almost disappears. The mixture may turn almost white and triple in volume.

Then beat in the coconut milk and the melted butter. Then also add the grated coconut, lemon zest + juice, salt and baking powder and stir to a thick batter.

In another bowl, beat the egg whites until stiff and then carefully fold into the batter.

Heat the waffle iron. When it is up to temperature, you can grease the irons with a little oil or baking spray.

Spoon a gravy spoon of the batter onto each waffle iron (ie 2 at a time) and bake the waffles until golden and golden in a few minutes. Continue until the batter is finished.

Sprinkle the Caribbean waffles with powdered sugar, fruit pieces and lemon slices. Enjoy your meal!
