tostones / patacones – double-fried plantain

Tostones are tasty snacks made from plantain, but they lack the sweet banana flavor. This is because the recipe uses the green (unripe) bananas, which are full of starch, but still contain very little sugar.

The tostones therefore taste neutral and can be eaten with a tasty sauce, or with a meat or fish dish. You can eat them instead of rice, potatoes or funchi.



Ingredients:

  • 3 green plantains
  • 1 / 2 teaspoon of salt
  • 1 / 2 teaspoon garlic powder
  • oil for baking

Preparation tostones:

Peel the plantains. You CANNOT do this the 'normal way': You peel a green plantain by first cutting off the two ends of the banana. Then cut the skin along the ribs with a sharp knife.

After this, peel off the pieces of peel lengthwise. Cut the bananas into slices and fry them in a layer of oil until they are golden. (about 3 minutes on each side)

Tostones patacon patacones recipe antillian colombian recipe20192Then take one slice at a time and place it between two sheets of baking paper. Crush the disc by pushing a plate on it.



When all the slices are flat, you can fry them again in oil. Drain the tostones on kitchen paper and sprinkle with some salt and garlic powder.
