We don't like to cook from cans, but we'll make an exception for this corned beef! It's the ultimate student food: quick, easy and cheap... but still (fair is fair) one of the best types 'comfort food' that exists.
It is originally an Irish dish. If I have it right in saying that "corned beef" Irish still is quite different than the stuff that we know from a can. There the beef (usually brisket) is salted and then slowly cooked. The structure of the meat is then preserved and the result is butter-soft pulled meat.
In the Antilles, however, we know the more Dutch version. So with canned potatoes and corned beef. Not the same as the original, but also very tasty. This recipe is especially popular with children.
This recipe is for 4 people. You can make it in half an hour.
- 50 gr butter
- 1 onion
- 2 cloves garlic
- 1 tbsp Worcestershire Sauce
- 2 cans of corned beef
- 1,5 kg of potatoes
- 1 small bunch of parsley
- salt and pepper to taste
- optional: 1/2 finely chopped Madame Jeanette pepper, for extra spice
Preparation of the corned beef hash
Peel the potatoes and then cut them into cubes. Boil the potato cubes for about 10 minutes (in salted water). Then drain them well.
Then chop the onion and squeeze the garlic cloves. Then heat the butter in a large frying pan. Saute the onion over low heat for a few minutes until it is translucent.
Now add the potato cubes and fry until they start to colour. Cut the corned beef into pieces and then also add it to the dish. Spoon the tablespoon of Worchestershire sauce over the dish as well.
From now on it is important that you toss the dish very carefully, so as not to break the corned beef too much!
When the potatoes are golden brown, you can remove the pan from the heat. Then chop the parsley very finely and sprinkle it over the dish. Do you like spicy? Add the Madame Jeanette pepper cut into pieces or stir a spoon pika (Sambal) by the court!
Finally, finish the dish with salt and pepper to taste. - Enjoy your meal!
